Do you ever serve breakfast for dinner? It’s a big hit around here. Last week while I was making pancakes I was feeling a bit adventurous so I tried out a new recipe. I thought it turned out delicious. I spent this morning testing it out more and am ready to share these amazing Apple Butter Pancakes with you. I will admit this is a cheater recipe. I used Bisquick mix.
Apple Butter Pancakes
Ingredients:
Pancake Mix and ingredients to make
1/2 tsp Vanilla
4-6 Tbsp. Apple Butter (I made mine using a crock pot recipe)
Butter or non-stick spray
Directions: Prepare pancake batter as directed. Add 1/2 tsp. of Vanilla to the batter and stir. Then add 4-6 Tbsp of Apple Butter (4 Tbsp. for a less flavor and 6 Tbsp. for more flavor.) Butter or spray griddle or pan. Pour batter in 1/4 cupfuls onto hot prepared griddle or pan. Cook as you would normally cook pancakes.
I knew the Apple Butter Pancakes would be even better topped with Fried Apples and I was so right. My mom has made fried apples every fall for as long as I can remember. They are so good that it’s no surprise I make them for my family every fall too.
Fried Apples
Ingredients:
Apples (select a type used for baking or in pies)
3/4 cup sugar
1 tsp. cinnamon
1/4 cup butter
Directions: Peel (optional), core, and slice apples. (I have a handy Apple corer, peeler, slicer tool from the Pampered Chef that does this perfectly). Place all ingredients in a saucepan. Cook over Med- Med/low heat for 30 minutes stirring occasionally. Note: Ingredient amounts can be changed depending on taste. Cook times vary depending on apple type and desired results. Cook longer for mushier apples, shorter for firmer apples pieces.
I enjoyed this entire plate of Apple Butter Pancakes with Fried apples, sharing with Sadie of course. You could serve the pancakes with or without syrup, and I think several flavors of syrup would pair nicely with the pancakes. These are a must for your fall menu!
