Ok I didn’t know what to call this, Ice cream cake or pie. After you see how I made it tell me which you would call it. Ok, thanks!!! Really this recipe can be adapted for any kind of candy bar. I happen to really enjoy toffee. When I was at the store replenishing our ice cream stock I saw this toffee ice cream. That’s when the idea hit me to make it into something so delicious. I picked up a few more ingredients to make a Toffee Ice Cream Pie. I wasn’t lying when I said we eat ice cream every night, remeber the other ice cream recipes I shared.
Ingredients
- 1 carton of ice cream with toffee mixed in
- 1 graham cracker crust (or ingredients to make)
- 1 container of whipped topping like Cool Whip
- Toffee
I cheated by using an already made crust, you can cheat too or make your own graham cracker crust. To get the ice cream soft enough to spread into the crust pop it into the microwave for about 20 seconds. Using a good ice cream scoop fill the crust with the toffee ice cream. I used the whole container of ice cream.
Cover the ice cream with the Cool Whip or whipped topping. I didn’t use the entire container, but most of it.
Crush a toffee candy bar like a Heath bar or make your own toffee bits or use toffee pieces from the baking section of your store. Sprinkle on top.
Freeze for about an hour. Which sounds like a silly instruction when you need to let it sit out for about 15 minutes before cutting and serving. I don’t know who liked it more me or my oldest son. The pie kept well covered in the freezer.
